Beer Cheese Soup


It's my birthday.  So let's talk about cheese!  

Oh cheese, I love you so.  If a doctor told me I was allergic to you, I would chuckle and proclaim, "F off, body, I do not care about your intolerances!"  (Ok, maybe that would be extreme, but I would at least mourn in all black for 3 full months.)  I have not met a cheese that I do not love.  Even the truly pungent, stinky kinds I will at least try and appreciate.  As I mentioned, it is my birthday, and if someone presented me with a layer cake full of sharp cheddar and frosted with triple cream and topped with cheese curds I would... um, barf.  I'm taking this too far.

Anyway, as I mentioned in my post yesterday, we had a parade of food at our Super Bowl party.  So much so, that we aborted a few dishes we were planning to make, like nachos full of different types of shredded cheddar (horseradish being one of them).  With the leftover cheese, I made a Cheddar Beer Soup on Monday, and topped it with freshly popped popcorn.  It was everything I love about cheese... rich, creamy, and perfect with beer.  Alright, I'm off to tend to another neglected Super Bowl dish... fried cheese curds for breakfast!  It's my birthday, I don't care.
